Heck yes, my friends! This recipe can 100% be made dairy free, just swap out the butter for your favorite plant-based butter and plant-based chocolate chips! I love using Country Crock’s Avocado Butter Sticks for dairy free butter substitutions. I also love using the Nestle Allergen Free Chocolate Chips!

What if I don’t have a skillet to bake this recipe in?

No worries at all! This recipe is perfect for a 6in round cake pan or double the recipe and bake in an 8×8 square pan for chocolate chip cookie bars! YUM!!!

Ingredients
  

  • 5 tbsp. (70g) Butter unsalted, melted
  • 2 tbsp (30g) Granulated Sugar
  • 1/4 c. (57g) Brown Sugar light
  • 1 Egg Yolk
  • 1/2 tsp. (3g) Vanilla Extract
  • 3/4 c. (95g) Gluten Free All-Purpose Flour
  • pinch Salt
  • 1/4 tsp. (2g) Baking soda
  • 1/2 c. (100g) Mini Chocolate Chips

Instructions
 

  • Preheat oven to 350°F and spray a 6-inch skillet with nonstick baking spray.
  • In a medium sized bowl, whisk together the melted butter, sugar, and brown sugar until combined.
  • Next, add the egg yolk and vanilla extract and whisk until combined.
  • Next, add the gluten free flour, salt, baking soda and stir together with a rubber spatula until combined.
  • Finally, add the mini chocolate chips to the batter and stir with a rubber spatula until combined.
  • Add the cookie dough to the prepared 6-inch skillet and place in the oven.
  • Bake for 25 to 30 minutes, or until the edges begin to turn golden brown.
  • Allow the cookie skillet to cool for 5 to 10 minutes and enjoy with a scoop of vanilla ice cream!
