No Bake Cookie Dough Bites

Ingredients:

Butter: adds richness and a creamy texture to the dough. It helps to bind the ingredients together and contributes to the overall flavor of the cookie dough.

Granulated & Brown Sugar provides the necessary sweetness to the cookie dough bites, enhancing the flavor and making them irresistibly delicious!

Egg Replacer & Water: the combination of egg replacer and water helps to mimic the binding properties of eggs. It helps hold the dough together and maintain its desired consistency all while being safe to eat raw. I LOVE using this Egg Replacer by Bobs Redmill!

Vanilla Extract: adds delightful aroma and flavor to the cookie dough bites.

Gluten Free Flour: provides structure and texture to the cookie dough, replacing the role of gluten in traditional flour. It helps to create a cohesive dough that can be easily shaped and enjoyed. I LOVE using the Bobs Red Mill Gluten Free Flour Blend or the King Arthur Measure for Measure Gluten Free Flour. Both of these Gluten free flour blends are FANTASTIC!

Salt: enhances the flavors in the dough by balancing the sweetness and adding depth. In addition, it brings out the chocolate flavors in the dough!

Chocolate Chips: adds bursts of chocolate flavor throughout the dough and provides a contrast in textures.

How to heat treat Gluten Free flour:

  1. Preheat oven to 350°F (175°C).
  2. Add the GF flour to a cake pan or brownie pan (any kind of pan/oven safe dish that has a rim).
  3. Bake for 10-15 minutes, ensuring that the GF flour reaches a temperature of 160°F to eliminate bacteria. Let the flour cool.
  4. Once cooled, sift the GF flour to eliminate lumps and store in an airtight container or use immediately.

*Heat treating GF flour reduces the risk of bacteria!!*

Common Questions:

Why can’t you eat raw cookie dough?

The two main reasons why it’s not recommended to eat raw cookie dough:

  1. Raw Eggs: raw eggs carry the risk of salmonella contamination which can cause foodborne illnesses. Therefore, eating raw cookie dough puts you at risk of getting sick.
  2. Uncooked flour: raw flour can also harbor harmful bacteria, such as E. coli. Flour is normally not subject to any treatment that would kill these bacteria’s, and consuming raw flour can lead to a foodborne illness. Cooking or heat-treating flour is necessary to remove that risk.

What is heat treated flour?

Heat treated flour is flour that has been exposed to a high temperature to kill potentially harmful bacteria that can cause food borne illnesses. Heat treating flour removes the risk of foodborne illnesses associated with consuming raw or undercooked flour.

By baking flour in an oven at a high temperature, the flour reaches a temperature sufficient to kill off any bacteria that may be present. This process helps make the flour safer for consumption, particularly in recipes where the flour is not being cooked at all, such as these no bake cookie dough bites!

Can I bake this cookie dough to make cookies?

The short answer is no, making this cookie dough exactly how it is will not lead to beautiful and delicious cookies.

BUT…

All you have to do is ADD 1 ½ tsp. of baking soda to the flour and whisk it together before adding the flour into the batter! Then you can bake at 350°F for 10-12 minutes or until the edges start to become golden brown. YUMMM!!

Can I add other mix in’s to the batter?

Heck yah! You can add whatever you’d like, get creative my friends! Nuts, sprinkles, and/or freeze-dried fruits are all great options to add to this delicious treat!

Ingredients
  

  • 1 cup (228g) Butter softened
  • 3/4 cup (175g) Granulated Sugar
  • 3/4 cup (167g) Brown Sugar Light
  • 2 tbsp. (26g) Egg Replacer
  • 4 tbsp. (54g) Water
  • 2 tsp. (12g) Vanilla Extract
  • 2 1/2 cup (317g) Gluten Free Flour (Bob's Red Mill Brand) Heat Treated
  • 1 tsp. (8g) Salt
  • 10 oz (1 bag) Mini Chocolate Chips
  • Sea Salt Flakes (for Garnish) optional

Melted Chocolate for Dipping Cookie Dough Bites

  • 3 3/4 cup. (1 lb. 8 oz) Dark Chocolate chips
  • 1 1/2 tbsp. (21g) Vegetable Oil

Instructions
 

Cookie Dough

  • Preheat oven to 350°F.
  • Add flour to an oven safe dish(cake pan, casserole dish, etc.) bake for 10-12 minutes.
  • Set flour aside to cool.
  • In a small bowl, whisk together the egg replacer and water. Set aside to let it thicken.
  • In the bowl of a kitchen aid mixer, cream together the butter, sugar, and brown sugar on a medium high speed for 5 minutes until light and fluffy.
  • Next add the vanilla extract and mix until combined.
  • Add the egg replacer mixture and mix until combined.
  • Next, sift the heat treated flour and stir the salt into the flour. add to the mixing bowl and mix on a low speed until no flour is left behind.
  • Add the chocolate chips and mix on a low speed until mixed in throughout the dough.
  • Using desired cookie scoop size, scoop the cookie dough and roll into balls.
  • Place the rolled cookie dough balls on a parchment lined sheet tray and place in the freezer to firm up for 15-20 minutes.

Dipping Cookie Dough Bites in Chocolate

  • Melt the dark chocolate chips in a large liquid measuring cup. Melt in the microwave in 30 second increments, stirring after each 30 seconds, and continue doing that until all the chocolate is melted.
  • Once the chocolate is melted, add the vegetable oil and stir until smooth.
  • Remove 5-6 cookie dough bites from the freezer onto a plate.
  • Insert a toothpick into the top of the cookie dough bite. Then dip the cookie dough bite into the melted chocolate.
  • Place the dipped cookie dough bite on to a parchment lined cookie sheet and gently remove the toothpick.
  • Sprinkle with some sea salt flakes (optional) or drizzle some chocolate on top once the chocolate becomes firm. Repeat steps 3-6 until all cookie dough bites have been dipped in chocolate.
  • Once all the cookie dough bites have been dipped in chocolate, place them in the fridge so the chocolate can solidify.
  • Once the chocolate solidifies, store cookie dough bites in a sealed container in the fridge until ready to serve. Enjoy!
