Gluten Free Edible Cookie Dough

Servings 40 1 oz. Cookie Dough Bites
- 1 cup (228g) Butter softened
- 3/4 cup (175g) Granulated Sugar
- 3/4 cup (167g) Brown Sugar Light
- 2 tbsp. (26g) Egg Replacer
- 4 tbsp. (54g) Water
- 2 tsp. (12g) Vanilla Extract
- 2 1/2 cup (317g) Gluten Free Flour (Bob's Red Mill Brand) Heat Treated
- 1 tsp. (8g) Salt
- 10 oz (1 bag) Mini Chocolate Chips
- Sea Salt Flakes (for Garnish) optional
Melted Chocolate for Dipping Cookie Dough Bites
- 3 3/4 cup. (1 lb. 8 oz) Dark Chocolate chips
- 1 1/2 tbsp. (21g) Vegetable Oil
Cookie Dough
Preheat oven to 350°F.
Add flour to an oven safe dish(cake pan, casserole dish, etc.) bake for 10-12 minutes.
Set flour aside to cool.
In a small bowl, whisk together the egg replacer and water. Set aside to let it thicken.
In the bowl of a kitchen aid mixer, cream together the butter, sugar, and brown sugar on a medium high speed for 5 minutes until light and fluffy.
Next add the vanilla extract and mix until combined.
Add the egg replacer mixture and mix until combined.
Next, sift the heat treated flour and stir the salt into the flour. add to the mixing bowl and mix on a low speed until no flour is left behind.
Add the chocolate chips and mix on a low speed until mixed in throughout the dough.
Using desired cookie scoop size, scoop the cookie dough and roll into balls.
Place the rolled cookie dough balls on a parchment lined sheet tray and place in the freezer to firm up for 15-20 minutes.
Dipping Cookie Dough Bites in Chocolate
Melt the dark chocolate chips in a large liquid measuring cup. Melt in the microwave in 30 second increments, stirring after each 30 seconds, and continue doing that until all the chocolate is melted.
Once the chocolate is melted, add the vegetable oil and stir until smooth.
Remove 5-6 cookie dough bites from the freezer onto a plate.
Insert a toothpick into the top of the cookie dough bite. Then dip the cookie dough bite into the melted chocolate.
Place the dipped cookie dough bite on to a parchment lined cookie sheet and gently remove the toothpick.
Sprinkle with some sea salt flakes (optional) or drizzle some chocolate on top once the chocolate becomes firm. Repeat steps 3-6 until all cookie dough bites have been dipped in chocolate.
Once all the cookie dough bites have been dipped in chocolate, place them in the fridge so the chocolate can solidify.
Once the chocolate solidifies, store cookie dough bites in a sealed container in the fridge until ready to serve. Enjoy!
