Gluten Free Sugar Cookie Bars

GF Sugar Cookie Bars
- 1 cup (2 sticks) Butter unsalted, softened
- 1 1/2 cup (370g) Granulated Sugar
- 1 Egg whole
- 2 Egg Yolks
- 2 tsp. (10g) Vanilla Extract
- 3 cup (387g) Gluten Free All-Purpose Flour
- 1 tsp. (7g) Salt
- 2 tsp. (9g) Baking Powder
- 1 tbsp. (10g) Corn Starch
Frosting
- 1 cup (2 sticks) Butter unsalted, softened
- 3 cup (396g) Powdered Sugar
- 1/2 tsp. (3g) Cake Batter Extract optional
- 1/2 tsp. (3g) Vanilla Extract
- Splash Heavy cream
- 1 drop Food Coloring optional
GF Sugar Cookie Bars
Preheat oven to 350°F and prepare a 9x13in cake pan with tin foil and baking spray.
In a medium mixing bowl, measure out the sugar and softened butter.
Using a stand mixer fitted with the paddle attachment, mix the softened butter and sugar together on medium speed (speed 5 for a Kitchen Aid) for 2-4 minutes until light and fluffy.
Add the vanilla extract and mix until combined.
Next, scrape down the sides of the bowl and add one egg at a time mixing until fully combined and scraping down the sides of the bowl after each egg.
In a separate bowl, measure the flour, salt, baking powder, and corn starch. Whisk Together.
Add the dry ingredients to the mixing bowl and mix on a low speed until the flour is completely mixed in.
Spread dough evenly in the prepared 9x13in cake pan and bake for 20-25 minutes or until the edges of the cookie become slightly golden brown.
Once the cookie bars have been baked, let them cool completely before frosting
Frosting
In the bowl of a stand mixer fitted with the paddle attachment, add the butter and mix on a medium low speed until smooth.
Next add the powdered sugar, cake batter extract, vanilla extract, and heavy cream.
Mix on a low speed until all of the ingredients are combined.
Next, mix on a medium-low speed for one minute. Then add the food coloring and mix until all of the color is mixed in.
Once the sugar cookie bars have cooled completely, spread the frosting on the top, add desired sprinkles, and enjoy!
