Gluten Free Edible Sugar Cookie Dough Truffles

- 1 cup (228g) Butter softened
- 3/4 cup (175g) Granulated Sugar
- 1/4 cup (57g) Brown Sugar Light
- 2 tbsp. (26g) Egg Replacer
- 4 tbsp. (54g) Water
- 1 tsp. (5g) Vanilla Extract
- 1 tsp. (5g) Almond Extract Optional
- 3 cups (366g) Gluten Free All-Purpose Flour Heat Treated
- 1/2 tsp. (4g) Salt
Melted Chocolate for Dipping Cookie Dough Truffles
- 2 12 oz. Bags White chocolate Candy Melts for dipping
- 2-4 tbsp. Vegetable oil for dipping
- Holiday Sprinkles of your choice! for Garnish
Cookie Dough
Preheat oven to 350°F.
Add the gluten free flour to an oven safe dish (cake pan, casserole dish, etc.) bake for 10-12 minutes.
Set the heat treated flour aside to cool.
In a small bowl, whisk together the egg replacer and water. Set aside to let it thicken.
In the bowl of a kitchen aid mixer, cream together the butter, sugar, and brown sugar on a medium high speed for 5 minutes until light and fluffy.
Next, add the vanilla and almond extract and mix until combined.
Add the egg replacer mixture to the batter and mix on a medium-low speed until combined.
Next, sift the heat treated flour and stir the salt into the flour. Add the cooled heat treated flour to the mixing bowl and mix on a low speed until no flour is left behind.
Using desired cookie scoop size, scoop the cookie dough and roll into balls.
Place the rolled cookie dough balls on a parchment lined sheet tray and place in the freezer to firm up for 15-20 minutes.
Dipping Cookie Dough Bites in Chocolate
Melt the white chocolate candy melts in a large liquid measuring cup. Melt in the microwave in 30 second increments, stirring after each 30 seconds, and continue doing that until all the chocolate is melted.
Once the chocolate is melted, add the vegetable oil and stir until smooth.
Remove 5-6 cookie dough truffles from the freezer onto a plate.
Insert a toothpick into the top of the cookie dough truffle. Then dip the cookie dough truffle into the melted chocolate.
Place the dipped cookie dough truffle on to a parchment lined cookie sheet and gently remove the toothpick.
Add some holiday sprinkles on top once you remove the toothpick from the top of the truffle. Repeat steps 3-6 until all cookie dough bites have been dipped in chocolate.
Once all the cookie dough bites have been dipped in chocolate, place them in the fridge for 10-15 minutes so the chocolate can solidify.
Once the chocolate solidifies, store cookie dough bites in a sealed container in the fridge until ready to serve. Enjoy!
